Ingredients:

  • 2 cups (475ml) heavy cream
  • 1 cup (200g) granulated sugar
  • 2 large egg yolks
  • 1 tsp (5g) vanilla extract

  • 2 lemons, zested and juiced
  • 1/4 cup (60g) granulated sugar (for caramelizing)

Instructions:

  1. Preheat oven to 300掳F (150掳C).
  2. In a medium saucepan, whisk together cream, sugar, and lavender. Heat over medium heat, stirring occasionally, until sugar dissolves and mixture simmers.
  3. In a small bowl, whisk together egg yolks and vanilla. Gradually pour warm cream mixture into egg yolks, whisking constantly.
  4. Strain mixture into 4-6 ramekins or small baking dishes. Place in a large baking dish and add hot water to come halfway up the sides.
  5. Bake for 25-30 minutes or until set.
  6. Remove from water bath and let cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours.
  7. Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin. Caramelize with a kitchen torch or under the broiler until golden brown.
