- 1 1/2 cups (190g) all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup (200g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted
- 2 large eggs
- 1 cup (240ml) milk
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together melted butter, eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should still be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat. Grease with butter or cooking spray if needed.
- Drop the batter by 1/4 cupfuls onto the skillet or griddle.
- Cook for 2-3 minutes, until bubbles appear on the surface and edges start to dry.
- Flip and cook for another 1-2 minutes, until golden brown.
Yield: About 12-15 pancakes, depending on size.
