Ingredients:
- 1 1/2 cups (190g) unsalted butter, softened
- 1 3/4 cups (210g) granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (240ml) pineapple juice
- 1 cup (165g) crushed pineapple
Instructions:
- Preheat oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans.
- Beat butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, alternating with pineapple juice, beginning and ending with dry ingredients.
- Stir in crushed pineapple.
- Divide batter evenly between prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
