Ingredients:

  • 1 1/2 cups (190g) unsalted butter, softened
  • 1 3/4 cups (210g) granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (240ml) pineapple juice
  • 1 cup (165g) crushed pineapple

Instructions:

  1. Preheat oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans.
  2. Beat butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, alternating with pineapple juice, beginning and ending with dry ingredients.
  6. Stir in crushed pineapple.
  7. Divide batter evenly between prepared pans.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
