Ingredients:

For the rabri:
- 2 cups full-fat milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
For the syrup:
- 1 cup sugar
- 1 cup water
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon saffron threads, soaked in 1 tablespoon hot water
Instructions:
- Make the paneer: Boil milk, add lemon juice or vinegar, and stir until curdled. Strain, gather the edges, and squeeze out excess liquid. Knead until smooth.
- Shape the paneer: Divide into small balls or flatten into patties.
- Make the rabri: Boil milk, add sugar, cardamom powder, and saffron. Reduce heat and simmer until thickened.
- Assemble Ras Malai: Place paneer in a serving dish, pour rabri over it, and refrigerate until chilled.
- Make the syrup: Combine sugar, water, cardamom powder, and saffron. Bring to a boil, then reduce heat and simmer until slightly thickened.
- Serve: Drizzle syrup over Ras Malai and garnish with chopped nuts or dried fruit.
