Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup confectioners’ sugar
  • 1/4 cup unsalted butter, chilled and cut into small pieces

  • 1 cup fresh raspberries
  • 1 cup semisweet chocolate chips
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions:

  1. Preheat oven to 350°F (180°C).
  2. Make the crust: In a bowl, whisk together flour and confectioners’ sugar. Add butter and mix until crumbly. Press into a 9-inch (23cm) tart pan.
  3. Bake crust for 20-25 minutes or until lightly golden.
  4. Make the filling: In a bowl, mix together raspberries, chocolate chips, granulated sugar, cornstarch, and lemon juice.
  5. Arrange the raspberry mixture on the baked crust.
  6. Bake for an additional 25-30 minutes or until the filling is set and the crust is golden brown.
